The Proffesor has got angrier and even more insane. Zoidberg obviously became poorer and Bender became kinda cooler and more street wise.

In the first episode with Zapp and Kif, Kif obviously hates Zapp. He's more annoyed than depressed. It isn't until later that he becomes the low self-esteem doormat.

And then escapes from under Zapp's shadow entirely in season four with episodes like "Kif Gets Knocked up a Notch" and "300 Big Boys". I thought there were some great character moments in both of these, but most people would rather him be a doormat for Zapp.
My favorite, and probably the most inspired Kif moment in the series was how he treats Fry in "War is the H-word."

The problem with "300 Big Boys" (which I liked, btw) was that it made Kif into Amy's doormat, or lapdog might be a more fitting description. In "Love's Labours Lost In Space" he was priceless, bitter, pissed off, and very very annoyed. As they say in the audio commentaries, he's how Spock should've been around Kirk. Genius. In "Amazon Women In The Mood" he was just shy and uncertain about how to express his love for Amy. Probably one of Kif's best moments. "Where the Buggalo Roam" did a good job of advancing both of these aspects. "300 Big Boys" made him too pathetic. Originally posted by Atticus: Leela isn't that uptight anymore. She is way more easy-going now. Like in the series finale,
when she was eating that buggalo leg. She had food all over herself, she wasnt using silverware, and she had her feet on the table. You would have never seen her do anything that laid back earlier in the series. I agree, she's definetely loosened up. Drinking beer for breakfast and getting anoyed with Hermes and Zoidberg in "Spanish Fry" was another good moment.

I don't think she changed that much. She became nicer to Fry, but that was part of the ongoing plot.
They didn't really say anything about her being an animal lover until the second season. If she'd been like that since the beginning, maybe they would have made her a vegetarian. That would have been nice. But then there would have been even more inexplicable comparisons between her and Lisa Simpson, which I've never understood.
