But still she knows how he feels about her. Leela doesn't need to flaunt the fact that she is dating someone who is not Fry around him. Yes she can feel happy and excited hell I know I more tha likely would too but she doesn't need lord it over Fry.

Yup.  Just like Fry, she has some growing up to do as well regarding relationships but in a different way.  I think she does not mean to hurt him but she does not have the foresight to realize how it makes Fry feel when she tells him how well her relationships are going.  He's her friend and she wants to share her happiness, that's what's in her mind at the moment.

Leela's apparent coldness is all part of the formula for her character archetype; the tough, independent, sci-fi warrior woman. A female hero who has many characteristics of traditional male heroic stock characters, including their hard-arsed aloofness. As the genre dictates, if caught in a turn of events this warrior heroine will leave her wild, spiteful, cold ways when rescued by the main male character (or after almost losing him, or whatever) and transform into a loyal, loving woman.

In many ways that is what makes the interaction between Leela and Phil so interesting-  they are the exact opposite of the classical sci fi hero and heroine.  The tough space warrior is the woman and the empathetic, perceptive (more than one would think) and gentle one (who winds up having to get rescued a lot) is the man.  It certainly
makes for a great friendship.  Fry helps Leela relax and be grounded a bit more.  Leela encourages Fry to improve himself.
