Crustacean in Love, because:

The Decapodian National Anthem!  (Sound familiar?)

Zoidberg chopping off Fry's arm.

Edna!

(Oh, and the whole reference to Cyrano de Bergerac -- or Roxanne, if you want a good movie of it -- is excellent.)

My favorite Zoidberg episode is "That's Lobstertainment"!  That episode was awesome! My second is "A Taste of Freedom".

Have to go with "Why Must I Be A Crustacean In Love". Got to love the National Anthem thats played, and if you've seen the animatic version you know it plays during the whole fight as the temp music.

Freedom! Freedom! Freedom! Oy!

Though Zoidy's at his best for random, left-field jokes.

I love the giant Zoidberg in anthology of interest 1, even though this wasn't the central them of the episode it was one of its finest points!

So, now Zoidberg is big, huh? That's more like it! Who's intimidating who now, big city?  Hello, Mr. Chase Manhattan Bank. Deny my credit card application, will you?  [CRUSH]
Ah, the famed Apollo Theatre. Boo me off stage on open-mike night, huh? I'll show you!

Gotta go with the "Why Must I Be A Crustacean In Love" episode, if nothing else than for their nod to Star Trek.  The music when Fry & Zoidberg fight "to the death" makes me laugh everytime I hear it; it reminds me of the really bad cut to William Shatner's fight double in the Star Trek episode, who was, like, 14 inches taller and 20 years younger than Shatner.  Claw Plaw (click - click)!

To choose out of the 3 episodes cited I would go for why must i be a crustacean in love too. It surprises me in a way though that there haven't been more politically orientated episodes like 'A taste of freedom' given the extent of political satire in the simpsons episodes.

I read an interview that Matt Groening gave, and he said that, while The Simpsons was blatantly political, the writers on Futurama wrote episodes that didn't have a predetermined political point of view; they allowed you to make your own decisions.  Regardless, I enjoy the political shots taken in The Simpsons (showing Dracula as a member of the Ultra-Conservative Republican inner circle is hilarious)...

I know that this won't be a popular choice, but I'm going with That's Lobstertainment. I don't get why so many people really dislike that episode.

Face it- most character-centric episodes aren't bringing the best out of the character it is centered around (with the exception of Godfellas and most Fry-centric episodes). Dr. Zoidberg really has the best laughs when he's not the center of attention ("A Tale of Two Santas" when he was Jesus). I voted for "Why Must I Be a Crustacean in Love?", but if I could have chose a non-centric Dr. Zoidberg episode, then I'd choose "The Deep South."

Same here, me neither. I like it. I really enjoy Calculon's role in it.

As for Zoidberg, I've said elsewhere that my favorite use of him was in AOI1 where he plays the detective in the Leela segment. That to me is more how he should be featured.

"Roswell that Ends Well" may not triuly be "Zoibergcentric", but it has some of his best moments ever.

I agree with Kryten on this one. It's not Zoidberg mainly based but classic Zoidberg comes from this episode.

"Why Must I Be A Crustacean In Love" for me. If only for the tudoring sessions and Fry's reaction to getting his arm cut off.

Crustacean in Love for how Fry taught Zoidy how to pick up girls and how what he said was so stupid but Edna still fell for him. Oh and it was funny when Zoidberg cut off frys arm though the two funniest moments were when fry offered his hand and arm to get rid of Zoidbergs jelly lol and when Zoidberg put on his arm but got it wrong and fry was like "Wanna take another whack at this dr"
