Leela's ethnicity?

On consideration, I'd say...maybe Jewish-American? Leela's mom does sound very Jewish, and even if her Dad isn't, well, I'm sure that even in the sewers, there'd be different religious groups, and it's not unheard of to marry outside the faith.

Though I have to be honest and say that's a best guess.

she may have some genes. but she is mutated, and her parents are mutated, so all the genes are lost within the family

Not all the genes. Her being a mutant doesn't mean every single gene she has is mutated in some way. Just having one gene wrong can have huge affects.
