When the dude with the hair was saying to change places, Fry gets knocked around and spills oil in varying amounts, yet it comes back sometimes and not others.  What is up with that?

Maybe its like the coffee cup in "Cryonic Woman" where the coffee and cup come back together after being dropped and broken.

another time that happened was in Why Must I Be a Cruticean(sp?) in Love, the Z that zoidberg made in fry's shirt was there in one scene, gone in another, there in one, gone in another, it was weird.

It is a cartoon. They make mistakes when drawing scenes. No ones perfect.
EDIT: Also, there is another scene where things disappear in A Tale of Two Santas. When Santa is chasing them in the factory, he doesn't have his hat. Then when their jumping over toy soldiers, he does, then later he doesn't, then he has it again when he saves Bender.

Maybe he was considering if it really looked good on him or not. So he was taking it off and on in indecision.

ok then, on Space Pilot 3000, as Fry is about to walk out of the room when Leela gets frozen, it opens upwards, and then when he leaves after setting the 'freezer-doodle' (chryogenic tube) to 5 minutes, it closes sideways on him (and the same door closes downwards on him earlier in the episode). How do you explain that one?

Well watching ALOHO last night I saw that at the end of the final game while Leela and Jackie were talking, Leela's black mark thing above her nose appeared and disappeared every now and than.

Now and then not now and than. And I think that these things are thrown in so people like us could discuss them, thinking they are smarter than the animators when they really aren't.

Yes, anytime you spot tiny little inconsistencies like that, it's becase they were put there intentionally to give nerds something to talk about on the internet.  After all, it not very likely that the animators would make any mistakes while drawing thousands of animation cels.

about Fry's clothes: As far as I remember there were self-cleaning clothes meantioned as well in "Back to the Future". ... and that was just in 2000something and not the 31st century.
Beside of, it looks like if Fry does wear the same clothes (nearly) all the time since 1ACV01.

about the door: So, the door was making a joke with Fry, why not?
It's a robot, isn't it? Just think about Flexos "Jokes" with poor Fry.

To be fair, the Z stayed there a hell of a lot longer than it would on any other animated show. With some, you'd be lucky if Fry's arm stayed chopped off.

Yeah, whenever I saw that Dr. Z joke, I thought "Lets see how long that stays on his shirt." Of course, the joke was too good to pass up.
