I noticed that bricks drop behind Bender in Space Pilot 3000 before they take off in the PE ship, again in Bending in the Wind after Bender eats the fake-fat potato chips, and maybe other times.  What's the deal with this joke?

I think so, but if Jimmy cracks corn and nobody cares, why does he keep doing it?

BTW, I have almost no idea what that brick joke means. If it means something, the connection looks very vague.
