Actually, at one point Leela crashes into a billboard that says something like "over 3.8 x 10^10 popplers served", so Fry and Bender should have each made something like 1.5 billion dollars, which they obviously didn't

The only thing I've been able to come up with to explain it is that Fishy Joe just never paid Fry and Bender.  He turned out to be a sleazebag, after all.  Either that or he was bankrupted when people found out he was selling sentient food.

Or maybe they were going to buy mansions but by the time they did, the popplers weren't allowed to be eaten becuase of the omicronians. So as a result, they had to give all the money back.
But, I think soyelntOrange has a better explanation.

Entirely possible.
Said money could also have been siezed for  the Omicronians as compensation.

They lost it all in a pyramid scheme.

If Leela crashed into the billboard, and Fishy Joe heard of it, he might have paid for a new one with their incoming portion of the profit.

Simple simple. As Annika pointed out, fishy paid them $1 for each 12, and that was the starting price.

Once demand skyrocketed, other companies must've gotten into the poppler "harvesting" biz as well; after all, Fishy Joe kept selling them even after Leela learned they were sentient and (presumably) PE stopped supplying them. Besides, PE is not exactly the finest delivery service around, I mean, when was the last time you saw a delivery go as planned with them?

Bah. I don't like my own answer; it works logically, but it's a "real" answer, when what is required is a "Futurama" answer - the difference being that in the Futurama universe, the laws of physics are intertwined with the laws of comedy. Ah well.

The Professor pocketed all the money.  It's his delivery company, the money would go to him.  Then Bender stole it all and blew it on electricity and cheap floozies.  Duh.

From the transcript:

Gilman: You'll never make money that way. You supply 'em to me and I'll sell 'em for two bucks a dozen at my restaurants. I'll even pay you a dollar a dozen.

Bender: Yes! I'm gonna be rich. [He cheers and looks at Fry.] You too but it's hard to get excited about that.

Fry: How do we sign?

Fry's response implies he and Bender had a contract to supply Popplars to Fishy Joe. If they stopped suppling them when Leela found they were intelligent then they might have breached their contract to supply a fixed amount in a certain time period. In that case Fishy Joe could sue them for the lost profit on the undelivered Popplars. That could be as much or more $ than Fry and Bender made.

They gave it all to the orfanarium, then they bought it all on scratch cards and lost.  :(

Or they blew it on the upgrade for the ship.

I've got it.  In "The Day The World Stood Stupid", they threatened to buy lottery tickets.  I think they blew it on the super-lotto...
