It seems like everyone calls him "Fry."  It's the common name he's known by, and, if it is indeed the same preacher who talked to Fry in "Godfellas," he would know that. 

Perhaps he only included the "Phillip" part to make the funeral more ceremonious.  Referring to someone by their last name is seen as derogatory by some people.  It's customary to honor the deceased, so the preacher just referred to him as "Phillip" to seem respectful.

The funeral ejecting the coffin into space is simply a parody of the Star Trek movie: "The Wrath of Khan." Spock dies, then his coffin is ejected into space just like that. And "Scotty" plays the bagpipes.

I really wouldn't read anything more into it than it. It's just a dream sequence afterall.

The whole funeral part was to make the viewers belive that fried died before all of Leela tripping out started
