in the simpsons, Matt used his initials in the design of homer, M as the hair part above his ear and the G is his ear, i noticed with fry his hair at the back it is a M, has anyone seen a G?

1. As was said there's no specific nod to Matt Groening in Fry's hair.  The two forks were however chosen because it makes him familiar in silohette (MG said that the best character designs are ones you can recognize in silohette).
2.  It is true that Homer's ear was originally a G corresponding with the "M" in Homer's hair.  However, just would like to note that that was, I believe, only in the very early Tracy Ullman shorts and was changed to a normal cartoon ear before the series started.  It looked too weird and obvious.
