They've mentioned her a couple of times. They did praise her voice as Lee Lemon in "War Is The H-Word" and they were litterally in awe of her singing voice in "Hell Is Other Robots". Billy West mentions a few times how great he thinks Katey Sagal is. It's just that Katey only do Leela, and as brilliant as she is at that job there is more to commend on guys like Dave Herman, Billy West and Maurice LaMarche who is doing a multitude of characters, each with a distinct and different voice.

She got the role the traditional way: her agent asked if she was interested doing an audition, she said "Sure!", the agent set it up and she got the role. Besides you could ask those questions about any of the voice cast who didin't do any commentaries: Dave Herman, Frank Welker, Lauren Tom, Phil Lamarr, etc. Lauren Tom wasn't mentioned much either, Phil Lamarr hardly at all. It probably have something to do with the way the commentary sessions are done; there are no scripts, no pre-determined issues that need brought up during the episode, people just say whatever pops into their mind.
Was there some big falling out between her and the production team or something?
Not to our knowledge. As far as I know they all parted on good terms.

I've heard that she's not exactly in love with Futurama. She doesn't feel strongly about it one way or another and has said that she "doesn't get the show".
Not what I've heard, she have mentioned Futurama several times while on tv, urging people to watch the show.
This thread is about one of those times, on FOX no less.
In
this Starlog interview from mid-season 2 (
part 2 of the interview) she seems pretty impressed by the show, say she likes all the episodes so far and is particular fond of the character Leela.
If DVD commentary is anything like Family Guy's, you have to record them for free. She probably didn't feel commited enough to fly to some studio to do a free voice over for a cancelled show.
Or maybe she's just been to busy being a single parent, working on "8 Simple Rules...", various movies, etc.
