Fellowship Of the Ring, extended version, if you can sit through any of them. the cast is the best commentary.

I forgot one of my favourites.  For sheer insight, Almost Famous (The "Untitled" version) has a brilliant commentary.  Featuring a few of the crew, director Cameron Crowe and Cameron Crowe's mum.

Basically he has his mum there to explain all the parts of the movie he'd cribbed from his own life, and there's loads.

I liked Final Destination 2 and the history of gore! Sure the story was crap but it was a splatter film so....oh well!
