Fuck it! I made a false assumption about Muftak... He is the one I thouhjt of, of course, but something else disqualifies him from being in this selection... That's still a work-in-progress, fellas.
Regardless, I'm going to list the ones I can remember. And I'm going to forget several. Did I mention that I think this is a dumb question?
Anyway..
-The Ssi-ruuk invaision of Bakura. -The Dark Jedi Jerec and his search for the planet-sodomising power of the Valley of the Jedi. -Ysanne Isard and her Krytos virus (and numerous other machinations). -The rampages of Warlord Zsinj. -The conquest of Grand Admiral Thrawn. -Isard (and her clone) returning for another go. -The Reborn Emperor and his big fleet of naughtiness. -The 'threat' of Admiral Daala and her fleet of 4 Star Destroyers (I'm shaking in my space boots). -A sun destroying super-weapon piloted by a Sith initiate. -Some little force-punk and his power to control artificial intelligences and well as natural ones. -A big gun, built by a Hutt. Also, Daala returns for another go (and fails miserably). -A funny cokaroach-man tries to unleash a nasty horrible plague on the galaxy (he's part of the plague, you see. It makes sense in the book). -The Dark Jedi Desann and his army of force-using soldiers. -One of the Emperor's Dark Jedi attempting to start a Hitler-youth like movement. -The former apprentice of Desann, Tavion, raises another force-weilding army using an ancient Sith artifact. Also tries to resurrect ancient Sith Lord, Marka Ragnos. Fails. Ragnos is upset. -The genocidal ravages of the Yevetha. -The Dark Jedi Kueller's attempt to take over the galaxy (these Dark Jedi types always go for the big league). -An attempt by the Saccorian Triad to extort the NR into granting Corellia independece by threatening to blow up a lot of star systems. -A threatened civil war orchestrated by rogue elements of the Imperial Remnant. -The Dark Jedi Brakiss' attempt to wipe out the new Jedi. -A nasty Twi-lek's attempt to kill all humans using a variation of the Krytos virus. -An extra-galactic invasion by a race of humanoids called the Yuuzhan Vong who have no connection to the force. Thus, the force cannot be directly used against them. -Also, that droid commanding Force-user becomes a big nasty uber-Jedi.
That's it, for now. There's still books and stuff being released, so this list is only likely to grow.

Hehe, never quiet in a Galaxy far far away.
I personally think The Empire and The Emperor were the best Villans hand down. If they were just a little smarter they could have lasted a lot longer.
Just like reality, I expect there has been very little periods of actual peace in the SW Universe. Slacky's turn.
Also, Galaxy Gun is the worst name ever.

6? Technically 10 if you count that there are only 2 X-Wings from Red Group left at the end of the battle - we know they died because we can see them absent on screen Though of course there have been theories that many more than just 3 rebel starfighters survived Yavin - they just all didn't leave at exactly the same time. But I think we only see 6 definitely dying on screen. Red Leader and his two wingmen for his trench run. Biggs, Porkins, and another who gets hit early on after the TIEs arrive. I think.
