Through evolution, Decapodian's shells probably became transitional from hard to soft when the body part called for it. How else could he move his arms? (Squiggle bops...   :laff: )

To simple, to simple.  Remember, Zoidberg evolved on an entirely different planet.  Why shouldn't a creature take the best of Arthopods and Cephalopods to form a Decapodian, or, if you wish, a slimy lobster-squid monster.  There is no reason evolution can't go that way.

And, given the limits of claws (although Zoidy's don't see that limited), why not take your tentacles and deveolop something with a little more dexterity.

Have any of you seen The Future Is Wild on the Animal Planet channel? There was a whole thing on 'Squibbons' in several million (25 mil?) years, squids that could jump through the trees and communicate like the gibbon monkeys they were nicknamed after.

But I digress (as usual).

Zoidberg is magical, alright? He's learned how to use his claws to the best of his abilities.. even then, he can't help snapping things in two (like bottles, 30% Iron Chef).

He has a lifetime of experience in using his claws for various things. They're a natural part of him, so obviously he knows how to use them.

He might as well ask how Fry can manage to hold on to something soft without barbed claws, and the answer would be opposable thumbs (or something like that). Just because it seems weird to us doesn't mean it doesn't feel perfectly allright to Zoidy.

Did anyone notice how in AOI 1 Fry grabs one of Zoidberg's claws, dips it in sauce, and starts eating it after Leela cooked him. His claw is incredibly soft to eat considering how he can cut things with it!

As Teral said, Zoidberg has always had claws for hands, so he just naturally knows how to use them.
Also, you must take into account that Zoidberg is not a very good doctor.  Horrible in fact.  Remember in WMIBACIN; when he tried to cut off Fry's recently re-attached arm with his laser saw, and cut off his legs instead?  I think this is a result of his poor skills as a doctor, and of his hindered ability to operate a laser saw with his claws.

He seems to not be able to control the squeezing presssure of the claws occasionally.
For example: he can garden perfectly well (Deep South), and yet split a bottle in half and flail about in the lab.

Yeah, I guess if you swapped Zoidberg's claws for hands, he wouldn't be able to use them properly; using the claws is an acquired skill from birth.

Good point, but he would still have trouble with instruments designed for human hands, just as a human would find it hard to use decapodean instruments designed for barbed claws.
