In the episode War is the H-Word Zoidberg (when asked to operate) says "I'd love to operate but first I need to perform surgery" what the h-word does this mean nobody I know gets it >< (yes i know its a M.A.S.H reference but i still don't get either of them)

I think it's just MASH-esque dialog.  "Operate" in this case is ironicized to mean "have weird, alien sex."
