Is it true?  That Matt Greoning only wrote "Space Pilot 3000", and then let David X. Cohen take over?

Yes and no.

Yes, Matt's only writing credit is SP3k.

No, he didn't let Cohen take over.

Afterwards they left it to the writing staff of Futurama to write the episodes, while they busied themselves with vital and important executive producer stuff (whatever that is, mostly doing DVD commentaries).

David, having some experience as a writer from his Simpsons days, pitched in now and then (AOI) and wrote the occasional episode (like TWOF).

@ fatass: Well, my understanding is that after a rough draft of the script is written, it gets ent off to DXC for review. Also, he's part of the writing staff. Matt was busy with The Simpsons, as well, so he didn't have as much time as DXC. Oh, and they created the characters.

Actually Matt does very little, actual work on the Simpsons. The showrunner is the day-to-day boss (used to Mike Scully, currently is Al Jean) of the show.

I guess Matt's work on Futurama was primarily managing and negotiations with FOX.

The showrunner makes all the decisions on the show.  They define its direction, decide what does and doesn't go into the episodes, basically run the whole thing.  The writers just write the show; they don't decide the show's direction or what goes into it.  They just contribute essentially, while the showrunners have to manage the entire show.  Groening and Cohen were the showrunners on Futurama, although I do get the impression from the commentaries that Cohen did the most day to day stuff, while Groening was (as Teral suggested) a little more concerned with dealing with Fox then Cohen was.

Groening also created the concept and primary characters, as well as the art design, but of course he fleshed all of that out and finalized everything with Cohen.
